This month our meal theme was Classic Cuisine – The 50s and our winner was Ursula Jones with her Lima Bean & Spam dish. Ursula has shared her recipe with us below.
1 can of any flavor Spam
2-3 cans of seasoned green lima beens or seasoned butter beans ( I used 2 cans of green lima beans and one can of butter beans (I like the color mix). You can use more or less beans to taste.
1can of chopped tomatoes ( I used one pint of home canned tomatoes, drained them, then chopped them in the jar using a butter knife).
1small jar of pimento peppers, drained.
Remove Spam from jar and cut into 1/4″ slices across the short side.
Heat some bacon grease or oil in a skillet. Fry each Spam slice from both sides until lightly browned. Set aside on paper towels.
In a 2-3qt cooking pot combine the drained tomatoes and the lima/butter beans. Do not drain the beans! Heat the mixture and simmer with the lid off until sauce starts to thicken. If you want more sauce or you are short on time, you can mix 2 Tbs of corn starch with just enough water to make a thick paste and mix into the simmering sauce to thicken. Add it a little at a time since it will thicken quickly!
Take the pot off the burner. Add the slices of Spam by sticking them halfway into the bean mixture going around inside the pot in a circular pattern.
Drain the pimento peppers and add dabbs in between the Spam slices to add bits of color.
