Tamale Pie
1 4-lb baked hen
1 pkt Taco seasoning
1 lg can tomatoes
3 cans Tamales
1 can tomato sauce
1 10-oz can niblets corn
1 can tomato puree’
24-30 ripe olives ~ sliced
Save stock from baking hen. Put stock in heavy skillet, add all the tomatoes and seasoning with salt and pepper to taste. Bring to simmer for 1 1⁄2 hours. Chop chicken and cut tamales lengthwise. Layer chicken / corn / olives / then tamales in large casserole dish. Pour over all and bake in 300* oven until hot ~ about 40 minutes. Serves 8 – 10.
